Do you ever feel that you are eating the same standard meat and three veg? Whether it’s chicken, beef or fish, it can feel a bit repetitive. Hello coriander pesto! This is my go to addition to your meal plan and an easy way to jazz up any home cooked meal. You do have to love coriander to make this - although you could swap in basil to make a more traditional pesto flavor. Blender is also essential.
Coriander is a nice source of fiber and its leaves are rich in vitamin C, K and protein. This recipe also contains essential fats (almonds and olive oil) and the garlic and lemon is going to be great for a little immunity booster. It’s easy to prepare and its delicious!
What you will need:
- A big bunch of coriander
- Garlic, 2 cloves
- Juice from a lemon – about 2 tablespoons
- Salt & pepper
- ½ cup olive oil
- Handful of whole almonds or cashews
- Handful of grated Parmesan cheese (optional)
What you need to do:
Place all ingredients in your blender. Blend.
Store in a jar in your fridge. Add a dollop to everything!
This is sure to be a hit in your household. Delicious drizzled over an oven baked piece of salmon or as a condiment to your barbequed steak or even tossed through some roasted vegetables!
