I EAT BROCCOLI

Broccoli. You either love it or hate it. I’m personally a lover of this fibrous beauty and hopefully by the end of this post, you will be to! Whilst low in calories, this mighty veg is loaded with essential vitamins and minerals. Its levels of fiber are outstanding and it also offers some great doses of vitamin C and vitamin K! An all-round, jack-of-all-trades vegetable. And it’s cheap! Supermarkets and market always have an abundance of broccoli in stock, with prices very easy on the hip pocket. This means there is no excuse not to add it to any meal – and here are my top 5 ways you can work that broccoli in...

BLEND IT – Of course this is my go to option! Blend your raw broccoli into your next berry smoothie. The zesty berries mask any unwanted flavours whilst still getting you a decent serving of your daily veg. Blend with almond milk and cinnamon for a delicious sweet morning treat!

FRY IT – Have you tried frying your vegetables up with coconut oil? If not, get around that. Chuck some coco oil in a pan, pop in your broccoli florets and fry away! The coconut oil really changes up the flavours – very delicious!

BAKE IT – Grease a baking dish with olive oil. Add broccoli and crushed garlic. Sprinkle with a generous amount of grated parmesan cheese. Bake for 10 minutes on high heat – an excellent, delicious side dish.

SAUCE IT – Broccoli pesto is amazing. I make this at home in a food processor. Basil, broccoli, garlic, lemon rind and juice, olive oil, toasted pine nuts and Parmesan. Process until you make a nice, thick sauce. Add to pasta, steak, vegetables, antipasto platter – the list is endless!

GRATE IT – If you are looking to bulk up your salad, but don't want to be munching on a chunky bit of broccoli – grate it! Great for a quinoa or cous cous salad.
